Quick, Easy Zoodles with Creamy Avocado Sauce

This is an easy recipe for delicious zucchini noodles – or zoodles – with avocado sauce. And the best thing about it? You do not need any fancy tools!

For one person you will need:

– one zucchini

– one and a half avocados

– a quarter of a red onion

– two cloves of garlic

– a few drops of lemon juice

– salt and pepper to taste

– coriander/cilantro (if you are a monster, sorry, I mean if you are one of those people who do not think it tastes like dish soap)

You start by making your zoodles. If you happen to be one of the lucky people who own a spirailzer, go ahead and spiralize that zucchini. But if you do not own a spiralizer and, like me, not even a mandolin, just grab your grater and grate your zucchini lengthwise. Then set your zoodles aside while you make the sauce.

Mash the avocados with a fork. Again, you might be one of those people who own spiralizers and food processors, so you can just throw it in there. I personally prefer mashing them with a fork just because cleaning one fork takes so much less time than cleaning a food processor. Yes, I am lazy.

Dice the onion, crush the cloves of garlic, mix them with the avocado cream, add a few drops of lemon juice and salt and pepper if you like – and that’s it!

Mix your avocado sauce with your zoodles and enjoy!
